Crossing things off of my lists.

There are a handful of foods you will never see me use in a recipe. Ever.

Seafood other than tilapia or canned tuna.
Avocado.
Olives.
Sausage.
Beets.
Sweet potatoes.

All beef stews are pretty much the same, right? Meat. Potatoes. Celery. Carrots. Onions. Blah, boring, blah. I chose to do "Hearty Beef Stew" yesterday just to be able to say I've made a beef stew. "I have made a beef stew." Let's move on, shall we?

When I was charting the weekly meal plan, two beef dishes in a row was NOT on the menu, but something came up midweek and I had to rearrange things. On the menu today? Pot Roast. But this isn't just any ol' pot roast. Why? It has APPLES in it! Seriously? Seriously. I had to try it. Even though I "don't do sweet potatoes".

Autumn Beef Pot Roast Au Jus (6 quart pot)

~2.5 lbs beef roast
~1 medium onion, chopped
~2 sweet potatoes, peeled and chopped into 1 inch pieces
~2 Granny Smith apples, cored and sliced into 12 wedges
~2 t thyme
~1 can beef broth

Place everything into crock pot. Place roast on top.

Cover and cook on low for 10 hours.

6 servings.

Yes, I crossed sweet potatoes off of my list. It was THAT good.
