Like someone's grandma used to make.

One of my favorite memories of my grandmother was her cooking and baking. She made a mean spinach casserole, a fabulous pineapple upside down cake, and a fantastic cherry chocolate cake. I kinda wish I knew where all of her recipes ended up. Ah, well...

Chicken is something I make a lot of sans crock pot and I've made a couple of chicken based crock potted meals in the last few weeks, it's just that none of them have really stood out tastewise. I was paging through the cookbook last week in search of THE chicken recipe when I found one I had to try. Why? 2 reasons: the recipe's name made me laugh and (believe it or not) I don't think I've ever had chicken and dumplings before. Ever. It's not something my grandmother (or mother) ever made. Sold!

"Like Grandma's Chicken 'N Dumplings" (6 quart pot)

~2 cooked chicken breasts, cut into bite sized pieces
~1 can cream of mushroom soup
~1 can cream of chicken soup
~2 soup cans water
~4 t flour
~2 t chicken bouillon granules
~1/2 t black pepper
~1 can refrigerated buttermilk biscuits (8 biscuits)

Combine all ingredients except biscuits in crock pot.
Cut biscuits into quarters and gently stir into mixture.

Cover and cook on low for 6 hours.

4 servings.



And since I'll probably never find my grandmother's cherry chocolate cake recipe, I used one from a cookbook. Although, if I've learned anything from the spinach casserole yesterday, this could very well be her recipe. More or less.

Gooey Cherry Chocolate Cake (3.5 quart pot)

~1 can lite cherry pie filling
~1 Betty Crocker devil's food cake mix (plus ingredients as directed on box: 1/2 cup water, 1 1/3 cup vegetable oil, 3 eggs)

Grease crock pot.
Pour cherry pie filling into the bottom of the crock pot.
Mix cake mix as directed on box and pour on top of cherry pie filling.

Cover and cook for 4 hours. Uncover crock pot and place large plate upside down on top. Carefully flip over crock pot onto plate to remove cake.

8-10 servings.
