Potatoes are the best invention ever. Ok, not really, but they are another ingredient you'll be seeing me use A LOT. I love me some 'taters. After perusing my cookbooks for several weeks, I got kinda sick of seeing recipes for scalloped potatoes, ham and potatoes, and potato chowders. I'm sure they're delicious, but I wanted something different. Different how? I had no idea. Then, I found this...
Deluxe Potato Casserole (6 quart pot)
~1 can condensed cream of chicken soup
~8 oz sour cream
~1/4 cup chopped onion
~1/4 cup plus 3 T melted butter, divided
~1 t salt
~4 white potatoes, peeled and chopped
~ 2 cups shredded cheddar cheese
~2 cups stuffing mix
Combine soup, sour cream, onion, 1/4 cup butter, and salt in small bowl.
Combine potatoes and cheese in crock pot.
Pour soup mixture over potato mixture and mix well.
Sprinkle stuffing over potato mixture.
Drizzle with remaining 3 T butter.
Cover and cook on low for 9 hours.
8-10 servings.

Half way through the day, I started plotting out next week's meals. I was sitting here looking though the weekly circulars and making my shopping list when I decided I wanted something green with dinner tonight. Was I feeling guilty about the heart attack that I had cooking? I thought so, but then I realized that his one isn't particularly healthy either.
Cheesy Broccoli Casserole (3.5 quart pot)
~10 oz chopped broccoli, thawed
~1 can condensed cream of celery soup
~1 1/4 cups shredded cheddar cheese, divided
~1/4 cup minced onions
~1 t paprika
~1 t hot pepper sauce
~1/2 t celery seed
~1 cup crushed saltines
Lightly coat crock pot with Pam.
Combine broccoli, soup, 1 cup of cheese, onions, paprika, pepper sauce, and celery seed and mix well.
Cover and cook on high for 2 1/2 hours.
Uncover; sprinkle top with crushed saltines and remaining cheese.
Cook on high 15-30 minutes or until cheese melts
4-6 servings
