Our We don't do Valentine's Day Valentine's Day dinner.

We don't do Valentine's day, but if we did, I might consider making my other half his second favorite crock potted meal (so far). I guess he got lucky on Valentine's Day (Ha!) because turkey won in my Facebook poll last night. (Turkey and pork actually tied, but I put the beef vote in the turkey tally count because, well...you'll see.)

I made this recipe 3 weeks ago and it was a HUGE hit. I added it to my list of things to make this week for the sole purpose of being able to blog about it and share the recipe. You'll see that that's true of a few things I'm making this week. *hint, hint*

'Beefy' Cornbread Casserole (6 quart pot)

~1 lb lean ground turkey, browned and drained (the original recipe calls for ground beef, but I nearly always make this substitute in ground beef recipes.)
~1 medium onion
~1 can tomato soup, condensed
~1 15oz can whole kernel corn, drained
~2 T chili powder
~1 t salt
1/2 cup water

Topping:

~1 pouch Jiffy cornbread mix
~1 egg
~2 T butter, melted
~1/3 cup milk
~1/2 cup grated cheddar cheese

Place turkey and onion in crock pot. Stir in soup, corn, chili powder, salt, and water.

In a separate bowl, mix cornbread mix, egg, butter, and milk. Spread evenly over turkey mixture. Cover and cook on low for 6 hours. Sprinkle cheese over top for last 15 minutes of cooking.

6-8 servings



Initially, I wasn't going to make a dessert, but I decided that my anti-Valentine's Day meal needed one and me not wanting box of chocolates today doesn't make me any less of a chocolate lover. 

Triple Rich Chocolate Cake (3.5 quart pot)

~1 box Duncan Hines moist deluxe devil's food cake mix
~4 eggs
~8 oz light sour cream
~3/4 cup vegetable oil
~1 cup water
~1 package instant sugar free chocolate fudge pudding
~1 cup semi-sweet chocolate chips

Combine all ingredients into a large bowl and mix by hand. Pour into greased crock pot. 
Cover and cook on low for 5 hours.

8-10 servings

  1. This looks awesome. Question about the casserole - how many people does it feed? would it work to double the recipe, or just be really... thick? Thanks for sharing!

    I'm going to go back through all of my posts and add the serving sizes. I hadn't thought about that. This made enough for G and I to have 2 servings each for dinner with enough for 3 days of him taking leftovers to work with him. The cookbook says 6-8 servings . I think doubling it would work.
