It's another theme week! I crock a lot of meat because slow cooked meat is fantabulous and I'm a carnivore. I do realize, however, that vegetarians exist (Hi guys!) AND that they are fully capable of crocking as well. (As long as they get their veggie eating paws on a crock pot.) I've done a few vegetarian dishes, but I wanted to see if I could make a week out of it. So...it's vegetarian week a la crock pot a la yours truly.
I've seen a dozen different versions of this recipe. Some with meat. Some with tomatoes. Some without cheese. I picked this one because it was the first one that looked easy and had the word vegetarian in it's name.
"Vegetarian Stuffed Peppers" (6 quart pot)
~5 bell peppers

"Vegetarian Stuffed Peppers" (6 quart pot)
~5 bell peppers
~1/2 cup marinara
~1 can of black beans, drained and rinsed
~8oz of canned corn
~1 small onion, diced
~2 cups cooked long grain rice
~1/2 teaspoon paprika
~1/4 teaspoon salt
~1/4 teaspoon black pepper
~1 cup shredded cheddar cheese
~1/3 cup water
Cut off tops of peppers and remove seeds and other such innards.
Mix marinara, beans, corn, rice, paprika, salt, black pepper, and cheese in large bowl.
Spoon mixture into peppers.
Nestle peppers in crock pot so they aren't touching the sides of the pot.
Pour 1/3 cup water into crock pot.
Cover and cook on low for 7 hours.
Remove from crock serve using a ladle or other large spoon because they WILL fall apart.

These were yummy, but we both felt like something was missing. Garlic? Chili powder? Cumin? Something. I'll definitely make these again. I just have to figure out how to tweak the recipe.
These sound a lot like my go-to recipe for stuffed peppers (only I don't crock mine). I was surprised to see the marinara in here as to me it seems like it would be too sweet and/or with the wrong flavorings. Maybe some regular canned tomatoes or sauce + your spices (or, for a kick, something with hot peppers) would help. (I think I use pepper jack cheese on this recipe, which would also add a kick).
ReplyDeleteThanks for the tips! We (or rather, he) thought I should maybe add jalapeƱos, but we hadn't considered switching the cheese. That's a great idea. Next time! :
