My balls are always crocking.

Two of the I dinners I have lined up for the week have stuffing mix in them. I decided to make one of them tonight since we're running out of days in the week and I didn't want to do them back to back. I chose this one because we had all of the ingredients and didn't feel motivated enough to go to the store to get the ONE THING I was missing. We had a friend over for dinner tonight (Hi Steve!) and my other half asked me to make sure whatever I was making was enough to feed three people. So I did.

"Corn Stuffing Balls" (6 quart pot)

~1/2 cup celery, chopped
~1 T celery leaves, chopped
~1 small onion, diced
~14 oz can creamed corn
~1/4 cup milk
~1/8 t pepper
~6 oz pkg herb stuffing mix
~2 eggs, slightly beaten
~1/4 c butter, melted

Combine all ingredients except butter in a large bowl.
Shape into 8 balls and place in crock pot.
Pour melted butter over balls.
Cover and cook on low for 3 hours.

8 servings
These were tasty balls. Yes, I said tasty balls.

It's not a meal that we'll be eating on a regular basis, but it's something fun and different to do with stuffing. And it got me to eat creamed corn, which as a kid, was something I HATED. It made me want to crock homemade stuffing someday. That's now something on my to do list. Maybe to go with my Thanksgiving turkey. Yum.
