Proof vegetarian does not necessarily mean healthy.

The same SOUNDED healthy-ish. And it is until you get to ingredients 4 through 8.

"Squash Casserole" (6 quart pot)

~2 lbs yellow summer squash, thinly sliced
~half of a medium onion, chopped
~1 cup carrot, peeled and shredded
~1 can cream of mushroom soup (AKA the ingredient I was missing on Wednesday.)
~1 c light sour cream
~1/4 c flour
~1 pkg savory herb stuffing mix
~1/2 c butter, melted

Combine squash, onions, carrots, and soup in a large bowl.
Mix sour cream and flour in a small bowl and add to veggies.
Toss stuffing mix and butter in medium bowl.
Spread 1/2 of stuffing mix in crock pot.
Add vegetable mixture.
Top with remaining stuffing mix.
Cover and cook on low for 7 hours.

6 servings.
This was as delicious as it is bad for your arteries, so I won't be adding this to our "make all of the time list". I suppose it would be a good comfort casserole. It also disguises the veggies, so if you're looking to trick someone who HATES squash and carrots into eating his/her veggies, go for it.

I have one more vegetarian meal to make this week, so I'll be making it this weekend at some point. It's healthy and gluten free (if I remember correctly) and should totally make up for today's meal. I need to find healthier dishes. Seriously. That's a work in progress.
