Today's recipe is a bit weird. I have no idea why it's called a casserole. It looks like a stew. It tastes like a stew. Something about it is supposedly fall-ish. The original recipe called for turnips. I couldn't find any at the store, so I left them out. I'm not a big fan of turnips, so I wasn't too broken up about not being able to find them. I guess turnips are what makes this fall-ish.
"Fall Beef & Beer Casserole" (6 quart pot)
~2 T olive oil
~1 1/2 lbs beef stew meat
~2 T flour
~1 c beef stock
~12 oz brown ale (I used Dogfish Head's Indian Brown Ale)
~1 c water
~1 onion, sliced
~2 carrots, sliced
~1 leek, sliced
~2 celery stalks, sliced
~1 c sliced mushrooms
~1 t mixed herbs (I used a mixture of marjoram, thyme, and rosemary and then stuck a bay leaf in the pot for fun.)
Heat oil in large skillet over medium high heat.
Cook meat until brown on all sides.
Lower heat and add flour to skillet.
Cook 2 minutes, stirring frequently.
Add stock, beer, and water; bring to boil.
Transfer mixture to crock pot.
Add remaining ingredients.
Cover and cook on low for 8 hours.
Remove bay leaf before serving.
4 servings.
This was good. It wasn't the BEST thing in the world, but it was yummy and the beer my other half picked for it was perfect. Beer makes everything better! Who knew?
