Easy peasy, ricotta cheesy.

This may look familiar to those who have been following along since the beginning. Remember my first try making lasagna EVER? This is pretty much the same thing, only easier.

"Low-Maintenance Lasagna" (6 quart pot)

~6 lasagna noodles
~1 26 oz jar pasta sauce
~3/4 c water
~15 oz ricotta cheese
~1/2 c shredded carrot
~1 1/2 oz shredded mozzarella cheese

Spray crock pot with PAM.
Mix pasta sauce and water in a medium bowl.
Mix ricotta cheese and carrot in a separate medium bowl.
Pour 1/2 of the sauce mixture into crock pot.
Arrange 1/2 of the noodles on top of the sauce.
Spoon 1/2 ricotta mixture on top of noodles.
Sprinkle 1/2 mozzarella on top of ricotta mixture.
Pour second half of sauce mixture on top of mozzarella.
Arrange second half of noodles on top of sauce mixture.
Spoon second half of ricotta mixture on top of noodles.
Sprinkle second half of mozzarella on top of ricotta mixture.
Cover and cook on low for 3 hours.

6 servings.

After years of swearing up and down that I HATE ricotta cheese, I'm starting to think that I actually like it. I might have to re-try a cannoli someday. You know, so I can be absolutely sure. Lasagna is delicious. Who knew? I foresee even more variations of lasagna being crocked in the future. Besides, I have to make up for the 29 years or so I'd gone lasagna-less somehow, right?
