I made these yesterday, but ended up getting too busy to blog about it.
"Rio Grande Ribs" (6 quart pot)
~4 lbs ribs (I used St. Louis Spare Ribs)
~salt and pepper to taste
~1 (16 oz) jar picante sauce (I used hot)
~1/2 c beer (I used a honey ale homebrew)
~1/4 c Frank's red hot sauce
~1 t chili powder
~2 c French's french fried onions
Season ribs with salt and pepper.
Broil ribs 6 inched from broiler for 10 minutes, turning once.
Place ribs in crock pot.
Mix picante, beer, Frank's, and chili powder in small bowl.
Pour mixture over ribs.
Cover and cook on low for 6 hours.
Remove ribs from crock pot and place on serving plate.
Turn crock pot to high.
Add 1 cup onions.
Cook uncovered for 10 minutes or until thickened.
Spoon sauce over ribs.
Sprinkle remaining 1 cup of onions on top of ribs.
4 servings.
These were WAY spicy. If you like ribs and things WAY spicy, you should make these. Have I mentioned that we like things spicy? Maybe once or twice, yes?
