This has been on my "must make" list forEVER.
"Pumpkin-Apple Dessert" (6 quart pot)
~1 (21 oz) can apple pie filling
~2 c flour
~1 1/4 c packed brown sugar
~3/4 c canned pumpkin
~4 eggs
~1/3 c vegetable oil
~2 t baking powder
~1 t cinnamon
~1/2 t nutmeg
~1/4 t baking soda
~cool whip
Spoon fie filling evenly into greased crock pot.
Beat all other ingredients (except cool whip)in a large bowl on low for 1 minute.
Increase to medium and beat for 2 minutes.
Pour mixture over pie filling.
Cover and cook on high for 1 1/2 hours (or until toothpick comes out cleanly)
Serve warm and top with cool whip. (The original recipe suggested serving it with ice cream, but we didn't have any, so I used some frozen cool whip that was hiding in the freezer.)
12 servings.
Nomnomnomnomnom. It's as tasty as it sounds.
