Today's "Make it better" was actually the inspiration for this week's theme. As I was perusing Safeway's produce section last week, I noticed they had fresh cranberries. I decided that I HAD to remake this. Just because.
Here's what I did this time:
"Cranberry Pork Chops and Sweet Potatoes TRY #2" (6 quart pot)
~4 pork chops (I used bone-in this time because (apparently) that's what happens when my other half volunteers to do the grocery shopping. Ha!)
~2 sweet potatoes, NOT peeled, and diced instead of sliced
~12 oz bag of fresh cranberries (The original called for 1/2 of the bag, but I used the whole thing. Such a rebel, I am.)
~1/2 c orange juice
~1/4 c sugar
~3 T brown sugar
~1 t ground cloves (Cloves were mentioned in the preparation section of the original recipe, but not in the ingredient list. I completely overlooked it last time. AND she didn't give a quantity, so I winged it.)
~1 t cinnamon (The original recipe says to put this on the sweet potatoes that were cooked in the OVEN. Like last time, I shoved the potatoes in the crock pot. Also, like the cloves, there was no quantity, so I guessed.)
Place pork chops and sweet potatoes in crock pot.
Mix cranberries, oj, and sugars in small bowl.
Pour mixture over pork and potatoes.
4 servings.
Oh man. I'd never used fresh cranberries for anything before, but I am most definitely using them again. This was is a fantastic fall recipe. Note to self: Find more cranberry recipes before cranberries aren't in season anymore.
