Pumpkin meat pie.

This was based on this recipe. I made some adjustments.

"Pumpkin Shepherd's Pie" (6 quart pot)

~5 red potatoes
~1 (14.5 oz) can pumpkin
~1/4 cup grated Parmesan cheese
~1/2 t salt
~1/2 t pepper
~1 onion, chopped
~2 carrots, peeled and chopped
~1 lb ground beef
~1 t garlic powder
~1 c beef broth
~1 t Worcestershire sauce

Microwave potatoes until done.
Place potatoes on a large bowl and mash with a fork.
Add 1 c pumpkin, 1/4 c cheese, 1/4 t salt, 1/4 t pepper to potatoes and mix well.
Set aside.
Brown beef with onion. Drain.
Mix beef with garlic powder, remaining 1/4 t salt, remaining 1/4 t pepper, broth, remaining pumpkin, and Worcester sauce.
Add beef mixture to greased crock pot.
Spread potato mixture on top.
Cover and cook on low for 6 hours.

6 servings.


Finally! I didn't screw up dinner! Shepherd's pie and pumpkin. Yum.
