This was supposed to be this recipe, but converted. I forgot to add the cinnamon stick. AND then I had to substitute peas for the green beans because I didn't realize that my little helper ate all of the ones we had. Oops. Here's what I ended up doing:
"Pumpkin Pork Stew" (6 quart pot)
~1 onion, chopped
~1 garlic clove, chopped
~1 T dried basil
~2 pounds pork tenderloin, cut into 1-inch pieces
~1 (28 oz)can diced tomatoes, undrained
~1 (15 oz) can pumpkin
~1 (14 1/2 oz) can chicken broth
~1/2 cup white Zinfandel (I used Arbor Mist Strawberry)
~1/4 teaspoon ground black pepper
~4 potatoes, cubed
Add all ingredients except peas to crock pot.
Cover and cook on low for 6 hours.
Add peas and mix just before serving.
6 servings.
This was really good. I'm kind of wondering what it'd taste like if I actually paid attention to what I was doing.
