Honestly, I thought yesterday was Friday and I had no plans to crock today/"on Saturday". My other half informed me late last night that it was, in fact, only Thursday. Really? Really. How about that... My little helper and I went to Safeway this afternoon and bought the makings for the last two recipes in the stack. I HAD to crock this one because the cook time was shorter. Well, that and I wanted to save the best recipe for last.

"Simmered Red Beans with Rice" (6 quart pot)
~2 cans (15 oz each) kidney beans, rinsed and drained
~1 (14 oz) can diced tomatoes, undrained
~1 celery stalk, chopped
~1 green bell pepper, chopped
~1/2 c green onions (with tops), chopped
~2 garlic cloves, minced
~2 t hot pepper sauce (I used Frank's Xtra Hot)
~1 t Worcestershire sauce
~1 bay leaf
~hot cooked rice
Combine all ingredients except rice in crock pot.
Cover and cook on low for 6 hours.
Slightly mash mixture with a potato masher to thicken.
Cook an additional 30 minutes.
Serve over rice.
6 servings.
If I was a vegetarian, this would be one of my go-to meals. It's super yummy.
