I've been attempting to do one meatless meal a week because it's, you know, healthier and cheaper and stuff. I've been successful for 3 or weeks in a row now, I think. This comes from a vegan blogger. Mine ended up being ALMOST vegan.
"Mediterranean Stew" (6 quart pot)

~1 large eggplant, diced with peel
~1 zucchini, diced with peel
~1 yellow onion, diced
~1/4 c of golden raisins
~2 cloves garlic, minced
~1 can of chickpeas, drained and rinsed
~1/2 c chicken broth (I totally would've used veggie broth if I had it.)
~8 ounces of tomato sauce
~1/4 t cumin
~1/4 t tumeric
~1/4 t cayenne pepper
~1 t lemon zest
~dash cinnamon
~olive oil
Combine all ingredients in crock pot.
Stir until well mixed.
Cover, and cook on low for 8 hours.
4 servings.
This was awesomely different in a super flavorful and spicy kind of way. It's a different kind of spice than we're used to and it made my taste buds happy. I left out the olives because they would make my taste buds very, very sad. The original crocker suggested serving it over rice, quinoa, or something like that. I failed to read that part of the recipe until about 30 seconds ago, so THAT didn't happen. Oops.
