Tacos! Who doesn't like tacos? Anyone? Anyone? No? Alright then.
"Chile-Chicken Tacos" (6 quart pot)
~1 1/2 lb boneless chicken thighs
~1 envelope taco seasoning mix
~1 T brown sugar
~4 oz chopped green chilies
~1 c frozen corn
~10 oz enchilada sauce (I used HOT. Imagine that.)
~4 green onions, chopped
~taco shells
~shredded lettuce
~1 tomato, chopped
~shredded cheese
~sour cream
Spray crock pot.
Place chicken in crock pot
Sprinkle with taco seasoning and brown sugar. Toss to coat.
Mix in green chilies, corn, and 1/2 c enchilada sauce.
Refrigerate remaining sauce
Cover and cook on low for 7 hours
Remove chicken and shred.
Return shredded chicken to crock pot.
Stir in green onions
Cover and cook on low for 15 minutes
Heat remaining enchilada sauce
Serve chicken mixture in taco shells with lettuce, tomatoes, warm enchilada sauce, cheese, and sour cream.
6 servings.
My other half demanded I make this more often. AND said that he'd put it in his top 10. They're THAT good. Even my little helper loved them. He helped us eat IT ALL.
