Santa Fe Pinterest.

I don't understand Pinterest's search algorithm. At. All. The results from searching "crock pot" varied significantly from day to day. When I searched for recipes last week, this recipe showed up as the top pinned recipe. It was EVERYWHERE. It had been pinned 8000+ times. Today? It doesn't show up at all.

"Santa Fe Chicken" (6 quart pot) The original is HERE.

~1 1/2 lbs chicken breast
~1 (14.5 oz) can diced tomatoes with mild green chilies
~1/2 (15 oz) can black beans (I was going to use an entire can, but we had an open one in the fridge that HAD to be used, so...ours was slightly less beany.)
~8 oz frozen corn
~1/4 cup chopped fresh cilantro
~1 (14.5 oz) can fat free chicken broth
~3 green onions, chopped
~1 t garlic powder
~1 t onion powder
~1 t cumin
~1 t cayenne pepper (to taste...I heavy handed it.)
~pinch of salt
~rice, cooked
*sour cream (optional)
*shredded cheddar (optional)

Combine chicken broth, beans, corn, tomatoes, cilantro, green onions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot.
Season chicken breast with salt and lay on top.
Cover and cook on low for 10 hours.
30 minutes before serving, remove chicken and shred with forks.
Return chicken to slow cooker and mix.
Serve over rice.
Top with sour cream and cheese if desired. (I didn't add them at first, but I remembered that we had some low fat sour cream in the fridge and a bunch of cheese, so I put a bit of both on some of it. Just to make sure it wouldn't make it taste bad. (Yeah, that's it. That's my story and I'm sticking to it.)

I can see why this was pinned so much. It's like a take-home Chipotle burrito bowl. Nom nom nom.
