Back to subbing as usual.

This is the fourth (I think) stuffed pepper recipe I've crocked. I halved it because A: there's no way 8 would fit in either of my crock pots and B: There's no way the 3 of us would eat 8 even if they did fit. ESPECIALLY because peppers don't do so well as leftovers.

"Stuffed Bell Peppers" (6 quart pot)

The original recipe is HERE.

~1 lb ground turkey, browned beef
~4 red bell peppers, capped and seeded
~1 onion, chopped
~1/2 c rice, cooked
~1 egg, beaten
~1/4 c milk
~1/4 c ketchup
~1 t salt
~1/2 teaspoon of Pepper
~8 oz tomato sauce
~1/2 c frozen corn
~dash of hot pepper sauce

Combine all ingredients except peppers.
Gently pack mixture into peppers.
Place in greased slow cooker in such a way that they don't touch the sides of the crock pot.
Cover and cook on low for 9 hours.

4 servings
As per usual, I made a few substitutions. The biggie is that I subbed turkey for the beef. (You'll see why this weekend. *hint, hint*) These were pretty good. My other half thought they'd be better with cheese. (Isn't that part of our constitution at the point?)
