This poor recipe didn't get ANY love from the voters. That didn't stop me from crocking it! It has pumpkin in the title, so I kind of had to. Rules are rules.
"Homemade Pumpkin Spaghetti Sauce" (6 quart pot)

~2 (14 oz cans) fire roasted tomatoes
~1 c Libby's canned pumpkin
~1 onion, chopped
~3 garlic cloves, chopped
~1/4 c tomato paste
~1 t oregano
~1/2 t basil
~1/4 t parsley
~1/2 t pepper
~1/4 t chili powder
~1/8 t sea salt
~1/4 t thyme
~2 T extra virgin olive oil
~Add fire-roasted tomatoes, pumpkin, and tomato paste.
~Stir.
~Add the olive oil, spices, salt and pepper.
~Stir.
~Add in the onion and garlic.
~Stir.
~Cover and cook on low for 3 hours.
~Serve over spaghetti.
4 servings.
It's chunky tomato sauce. It's yummy chunky tomato sauce, but it's not pumpkin-y at all. Both of us LOVE pumpkin flavor, so this was kind of disappointing. The recipe made it into the final 4 though, so maybe our taste buds are on the fritz today or something.
Interestingly, the author of the recipe on the DinerTool site explicitly state states that you "cannot taste it [the pumpkin]." Seems quite the misnomer to me.
ReplyDeleteYeah, I saw that. I'm not a big tomato sauce person, so I guess I was hoping that it was just a smidge pumpkin-y...just so it'd be a little different.
