I had to make this because it has some of my favorite ingredients in it AND it's super easy.
The original recipe is HERE.
This is what I did:
~2 lb pork boneless loin roast, cut into bite-sides pieces (It was the smallest I could find.)
~1 (16 oz jar) Newman's Own salsa, medium
~4 oz salsa verde
~1 (4 oz can) chopped green chilies, drained
~1 (15oz) can black beans, rinsed and drained
~shredded Monterey jack cheese
Combine pork, salsa, and chilies in the crock pot.
Cover and cook on low for 8 hours.
Stir in beans and cook for about 5 minutes or until hot.
Top with cheese.
4 servings.
My other half said that this is the best recipe of the week so far. He also said that it's the perfect proportion of chicken and vegetables. Yes, chicken. It's so good it makes pork taste like chicken.
