This recipe has been in my "must make" pile ever since last year(?) when my taste buds decided that they actually do like sweet potatoes.
"Jamaica-Me-Crazy Chicken Tropicale" (6 quart pot)
~2 sweet potatoes, cut into 2-inch pieces
~1 (8oz) can sliced water chestnuts, drained
~1 c golden raisins
~1 (20oz) can pineapple chunks, drained and juice reserved
~4 boneless skinless chicken breasts
~4 t jerk seasoning
~1/4 c dried onion flakes
~3 T grated fresh ginger
~2 T Worcestershire sauce
~1 T grated lime peel
~1 t cumin seed, slightly crushed
~rice, cooked
Place sweet potatoes in crock pot.
Add water chestnuts, raisins, and pineapple; mix well.
Sprinkle chicken with jerk seasoning.
Place chicken on top of potatoes.
Combine pineapple juice, onion flakes, ginger, Worcestershire sauce, lime peel, and cumin seed in a small bowl.
Pour mixture over chicken.
Cover and cook on low for 8 hours.
Serve with rice.
4 servings.
This was really good. There were so many different flavors for my taste buds to enjoy. It was unlike anything I've ever had before. I think I need to go back to Jamaica. Who's with me?
