El Plato Supreme.

While I was standing in line with a shopping cart full of cinnamon groceries wondering what in the world I was going to crock when I was done with the cookbook, I spotted a Taste of Home recipe card book for light slow cooker recipes. I had LOTS of fun with the silly game we played last year. (No recipes to search for. No shopping list to make. BLISS!) So...we're doing it again!  There are 58 recipe cards.

Kelly picked number 2. (Thanks, Kelly!) The second card was:

"Chipotle Beef Sandwiches" (6 quart pot)

~1 yellow onion, halved and thinly sliced
~1 beef sirloin tip roast (3 lbs)
~1 (16 oz) jar chipotle salsa
~1/2 c beer (I used Humboldt brown ale.)
~1 envelope Lipton's onion soup mix
~kaiser rolls, split

Place onion in crock pot.
Cut roast in half, place over onion.
Combine salsa, beer and soup mix in a bowl.
Pour mixture over top.
Cover and cook on low for 8 hours.
Remove roast.
Shred meat with 2 forks.
Return meat to crock pot; heat through.
Using a slotted spoon, spoon shredded meat onto rolls.

10 servings.
This was really good. It definitely hit the spot and would be perfect for "THE BIG GAME".
