"Flank Steak Tacos/Fajitas" (6 quart pot.)
~1 1/2 lb beef flank steak
~1 onion, sliced
~1 c tomato juice (I used a low-sodium V8.)
~1 jalapeño pepper, seeded and chopped
~2 garlic cloves, minced
~1 t dried cilantro (The card said 1 T fresh, but I improvised.)
~1 t ground cumin
~1 t chipotle chili powder (The card said chili powder. I used a slightly spicier one because I'm awesome like that.)
~1/4 t salt
~1 green bell pepper, julienned
~1 red bell pepper, julienned
~6 flour tortillas (Not that it REALLY matters, but I used soft taco sized AND fajita sized.)
~taco toppings (I used shredded cheddar, lettuce, and sour cream.)
Thinly slice steak across grain into strips.
Place beef in crock pot.
Add onion, tomato juice, jalapeño, garlic, cilantro, cumin chili powder, and salt.
Cover and cook on low for 5 hours.
Add green and red peppers.
Cover and cook for 1 hour longer or until meat and veggies are tender.
*Keep on warm for 2 hours because your other half unexpectedly gets out of work late. (Optional, of course)
Using a slotted spoon, remove meat from crock pot and get your taco/fajita on however you would like.
6 servings.
Nomnomnom. Spicy. Taco-ish. Fajita-ish. The veggies might've been a smidge overcooked, but my other half is taking the blame for that.
