Someone out there knows that we like buffalo chicken and sent me this recipe...
"Buffalo Chicken Lettuce Wraps" (The original recipe is HERE.)
~3 boneless, skinless chicken breasts
~1 celery stalk
~1/2 onion, diced
~1 garlic clove
~1 (16 oz) can chicken broth
~1 (16 oz) can water (or enough so that the chicken is completely submerged.)
~1/2 c Franks red hot sauce
~blue cheese crumbles and blue cheese dressing
~lettuce (I used romaine from the CSA, but iceberg would work better.)
Place chicken in crock pot.
Add celery, onion, garlic, broth, and water.
Cover and cook on HIGH for 4 hours.
Remove chicken and shred with forks.
Reserve 1/2 c liquid and toss the rest.
Add chicken, 1/2 liquid, and hot sauce to crock pot.
Cover and cook on HIGH for 30 minutes.
Place in lettuce and top with crumbles and dressing. (My other half doesn't do raw carrots or celery, so I improvised.)
4 servings.
Yum. Romaine isn't the right kind of lettuce to be wrap-y. (And I knew that.) Ours was more salad-y, but we didn't care. It was buffalo chicken-y and that's really all that matters in our universe. The only problem was that I didn't double (or triple) the recipe. I'm pretty sure our household could eat buffalo chicken something or other every single day and be totally okay with it.
