"Salsa Chicken" (6 quart pot)
~1 lb boneless, skinless chicken breast (I used 2 chicken breasts.)
~1 envelope taco seasoning
~16 oz salsa (I used a medium store brand.)
~1 c water
~rice, cooked
Place chicken in crock pot.
Sprinkle taco seasoning on top of chicken.
Dump salsa on top.
Add water.
Cover and cook on low for 8 hours.
Shred chicken.
Serve chicken over rice.
4 servings.
I served it with AMAZING corn on the cob (from the CSA.)
Mmm. Full of Mexican flavor and not super spicy. And super duper easy. It gets bonus points for that.
