This is the last recipe I'm doing from this particular E-book. It's "chapter 20". Don't worry, though. I still have 2 (2!!) more E-books to play with.
"Chicken Cacciatore" (6 quart pot)
~1 (28 oz) can diced tomatoes
~1 (10 oz) can Healthy Request tomato soup
~1 1/2 t Italian seasoning
~1 garlic clove, minced (The recipe said 1/2 t dried)
~8 oz mushrooms, sliced
~1 small green bell pepper, chopped
~1 small onion, chopped
~2 chicken breasts, cut into bite-sized pieces
Add all ingredients to crock pot and mix well.
Cover and cook on low for 8 hours.
4 servings.
I'm not a huge fan of chicken cacciatori, but this was pretty darn good. AND my little helper actually tasted some of the chicken. Woohoo!
On a related note, does anyone have any suggestions on how we can get our adorable toddler to eat ingredients that TOUCH each other? He must have some of his maternal great grandfather in him because he was the same.exact.way. It's driving me bananas.
