It's "Never Have I Ever" Week! All of the recipes this week will contain an ingredients that I THINK I've never had. I was inspired by one of my cookbooks: The Everything Healthy Slow Cooker Cookbook. ALL of the recipes this week come from this cookbook. About half of the recipes in it have an ingredient I've never heard of. Although, to be fair, it also uses words like "tamari" when the rest of the world uses soy (freakin') sauce. (Tamari? Really? And yes, I did have to look it up. I never said I was a good foodie.)
The first ingredient is...
*drum roll*
Tofu.
I've probably had tofu somewhere along the way and didn't know it. OR I did know it and I just plain forget. I definitely know I've never put in in my shopping cart and that I've never cooked it. I say that counts. I'm the boss. So there. I LOVE sweet and sour chicken, so I figured if I was going to try to cook tofu all by myself, I was going to make something I'd probably like. Besides, the universe says that tofu doesn't taste like anything. It tastes like whatever you put on it.
"Sweet and Sour Tofu" (6 quart pot)
~14 oz firm tofu, cubed
~1/4 c rice vinegar
~3 T water
~1 T sesame seeds
~1 T brown sugar
~1 T soy sauce
~1 T pineapple juice
~1 t ground ginger
~3/4 c pineapple chunks
~1 c frozen snow peas
~1 small onion, sliced
~rice, cooked
~green onions, shopped
Spray skillet with Pam.
Saute tofu until it's lightly browned on all sides.
Add to crock pot.
In a small bowl, mix vinegar, water, sesame seeds, brown sugar, soy sauce, pineapple juice, and ginger until sugar is dissolved.
Pour over tofu.
Add remaining ingredients.
Cover and cook on low for 4 hours.
Remove lid and cook on low for 30 additional minutes.
Serve over rice.
Top with green onions.
6 servings.
It's true. The universe is right. Tofu doesn't taste like anything. The sweet and sour sauce is delicious, though, so I guess that means that this meal is delicious. Maybe someday I'll redo this with chicken. Just for funzies, of course.
