I was able to remove fennel from my never have I ever list a few weeks ago, but rutabaga was still there. For serious.
"Lean Roast With Fennel And Rutabaga" (6 quart pot)
~2 lbs bottom round roast
~1/2 t salt
~1/2 t pepper
~2 fennel bulbs, sliced
~1 onion, sliced
~1 rutabaga, cubed (It called for 1 lb. The smallest I could find was probably 8 pounds.*)
~potato
Remove excess fat from roast.
Sprinkle salt and pepper on all sides of roast.
Heat saucepan on high for 30 seconds.
Sear each side of roast for 5 seconds.
Add roast to crock pot.
Top roast with fennel, onion, and rutabaga.
Serve with a baked potato
4 servings.
This had the potential to be delicious. It was good, but not great. The beef was a little tough and the rutabaga wasn't as soft as we'd liked, but it we both managed to eat everything I put on our plates. I think more liquid of some sort would've helped. AND possibly not using a rutabaga that was the size of my head*.
