A-B-C Soup.

Kids love to play with their food. Parents love learning tools that get their children to eat. This was another one of those clean out the pantry and refrigerator soups. I made this last weekend, but didn't get around to sampling it until this weekend. It's Already Been Crocked Soup!

"A-B-C Soup" (6 quart pot)

~4 c vegetable juice (I used the rest of the low sodium V8)
~3 c hot water
~1 1/4 lb beef round cubes
~2 lb bag of "vegetables for soup" (Hanover), frozen
~2 small white potatoes, peeled and diced
~3 beef bouillon cubes
~1 t fresh Italian parsley
~1/2 t pepper
~1/2 t sea salt
~1 garlic clove, minced

~1/2 cup alphabet shaped pasta, cooked*

Mix all ingredients except pasta in crock pot.
Cover and cook on low for 8 hours.
Add pasta and mix well.

8 servings.
This was a REALLY good soup. I liked it more than the similar soup I made during "What's in the box? week."

*The thing about this soup is that I don't know how far into the cooking time the pasta should be added. I added it at the beginning and it had completely disintegrated after the 8 hours. To get my proper alphabet soup look, I decided to cook more pasta and add it at the end. And then I played with the noodles because I'm a 30 year old little kid.
