Sweet and spicy.

You might remember that I'm not a big fan of sweet potatoes. If you do, you might remember that I made a pot roast that was so good I crossed them off of my list of things I will not crock. Since that meal, I wanted to add sweet potatoes into my diet and the ONLY possible way for me to do that is to crock some sweet potatoes. It's "Iron Chef: Sweet Potato Week!" Every meal I make this week is going to have sweet potatoes as an ingredient.

"Brown Sugar-Glazed Pork with Sweet Potatoes" (6 quart pot)

~2 sweet potatoes, peeled and sliced into 1/2 inch slices
~1 pork roast (I bought the last one Safeway had. It was only a pound.)
~2 T packed brown sugar
~1/4 t ground cayenne pepper
~1/4 t salt
~1/4 t pepper
~1 garlic clove, minced

Place sweet potatoes in crock pot.
Place pork on top of potatoes.
Mix all of the other ingredients in a small bowl.
Pour mixture over pork.
Cover and cook for 8 hours.

4 servings.
This was AMAZING. Somehow, I'd managed to be completely oblivious to the existence of ground cayenne pepper until I had to buy some for this recipe. Where has this spice been hiding? I'm totally going to use it when I attempt to make buffalo wings again. So spicy. So good. The sweet potatoes were awesome in this, too. I'd make this again, but I'll definitely buy a larger roast next time. And more potatoes.
