Estas son algunas de mis cosas favoritas.


For those who aren't from around here, Los Portales is a Mexican restaurant across the street from BWI airport. It's the best Mexican place around. Technically, it's a "chain" because Plaza Garabaldi has the SAME EXACT MENU, but the chef at Portales is better and the overall atmosphere of the place is better, too. I've mentioned that we're huge fans of Mexican food, so it should be no surprise that Portales is one of our favorite places to go. I always get their veggie fajitas and I'm quite obviously NOT a vegetarian.

I've created this recipe from the steak fajita recipe I did back in February. I took out the flank steak and red bell peppers and added mushrooms and cilantro. I also served them with refried beans and mexican cheese blend because that's what Portales does.

"Veggie Fajitas a Los Portales" (6 quart pot)

~8 oz fresh sliced mushrooms
~1 medium green bell pepper, cut into strips
~1 medium onion, cut into strips
~1/2 cup salsa, plus additional for garnish (I used Newman's Own Hot)
~2 T lime juice
~2 cloves garlic, minced
~1 T chili powder
~1 t ground cumin
~1/2 t salt
~1/4 t dried cilantro
~Small taco-sized flour tortillas

Mix all ingredients in greased crock pot.
Cover and cook on low for 6 hours.

4 servings.
My other half puts this in his list of favorites and has DEMANDED that I make it more often. Success! Te amo, Portales y sus fajitas veggie.
