Sweet and stew-ie.

As I was putting dinner together this morning, I received a phone call about a family emergency. While it was crocking, the house smelled absolutely amazing. All day long, I played phone tag with various family members while sitting in a house that smelled like an Indian restaurant wondering whether or not we'd be able to sample this tonight. Luckily, we were.

"Chicken and Sweet Potato Stew" (6 quart pot)

~3 chicken breasts, cut into bite-sized pieces
~2 sweet potatoes, peeled and cubed
~3 red potatoes, peeled and cubed
~2 medium carrots, peeled and cut into 1/2 inch thin slices
~1 can (28oz) whole stewed tomatoes
~1 t salt
~1 t paprika
~1 t celery seed
~1/2 t pepper
~1/4 t cinnamon
~1/4 t nutmeg
~1 t paprika
~1 cup vegetable stock

Combine all ingredients in crock pot.
Cover and cook on low for 8 hours.

6 servings.

This was as delicious as it smelled. My other half says it's one of his favorites. It looks like I'm going to have to get used to this whole eating sweet potatoes thing.
