A little bit of this and a little bit of that.

Yesterday, I started throwing all sorts of things into the crock pot. All willy nilly-like. It was pretty awesome.

"Clean Out The Fridge Cornbread Casserole" (6 quart pot)

~1 1/2 lbs stew beef
~14.5 oz crushed tomatoes (that were hiding in the back of the freezer)
~1 medium onion, chopped (that was hiding in the pantry)
~1 garlic clove, chopped
~2 stalks wilted celery (the last of the sad non crunchy celery)
~1/2 c marinara (because that's all that was left)
~1/2 c hot taco sauce (because that's all that was left)
~1 pkg cornbread and ingredients to make it as directed on box (oil, an egg, and milk)
~1/2 c grated parmesan cheese (because that's all that was left)

Mix beef, tomatoes, onion, garlic, celery, marinara, and taco sauce in medium bowl.
Pour mixture into greased crock pot.
Mix cornbread ingredients in small bowl.
Pour over beef mixture.
Cover and cook on low for 7 hours.
10 minutes before the 7 hours is up, remember that you meant to top the cornbread with cheese 20 minutes ago.
Keep on warm for an hour while you wait for your other half to get home from working later than he usually does.

6 servings.
This was 1000 times better than I thought it was going to be. The taco sauce gave it a little kick and actually following the directions on the cornbread box this time helped a WHOLE lot with the dryness problem we had last week when I tried something like this.

Here ends this week's crocking. Maybe next week I won't be lazy and I'll actually pick a theme and make a menu and go to the store and buy ingredients crock them and eat them. Maybe. We'll see.
