Today, I crocked the 9th rated meal. The original recipe is here.
This is what I did.
"Asian Chicken" (6 quart pot)
~1 green pepper, cut into strips
~1 yellow pepper, cut into strips
~1 red pepper, cut into strips
~1 onion, chopped
~2 cloves garlic, minced
~8 oz can sliced water chestnuts, drained
~4 oz can whole mushrooms, drained
~1/2 teaspoon ground ginger
~4 boneless, skinless chicken breasts
~4 tablespoons hoisin sauce
~1 teaspoon cayenne pepper
~rice, cooked
Place red, green, and yellow peppers, garlic, water chestnuts, mushrooms and ginger in crock pot.
Mix well.
Place chicken breast on top.
Spoon hoisin sauce over top of chicken.
Sprinkle with cayenne pepper.
Cover and cook on low for 8 hours.
Serve with rice.
4 servings.
I think cayenne pepper might be my new favorite spice. This was super spicy and super delicious. AND it gave me an idea for a future theme week. I'd definitely make this again. Mmm...
