This week is "Birthday Boy Week". In honor of my little helper's 1st birthday, yesterday, I've decided that everything I crock this week will be foods he likes. I'm not following any recipes this week. Everything is an original. I'm just shoving food he likes in to a crock pot and seeing what happens. We may be finding out if kiddo likes ordering wings as much as his mom and dad. Ha.
"Chicken and Veggies" (6 quart pot)
~4 boneless, skinless chicken breasts
~1 c frozen carrots
~1 c frozen peas
~3 russet potatoes, cubed
~1 c chicken broth
~1 T poultry seasoning
~1 t rosemary
Add all ingredients to crock pot.
Cover and cook on low for 8 hours.
4 servings.
This was good, but it was a little dry. I have no idea why. I tried to moisten it a bit by pouring some of the cooked broth on top after it was plated and that seemed to help a little. I'm sure my little helper won't know the difference.
