Beef. It's what's for lunch.

We had a slight change of plans yesterday and ended up having to go out to dinner. *Gasp!* Luckily, it had absolutely nothing having to do with a crock pot malfunction or dinner being inedible.

"Beef, Lentil, and Sweet Potato Stew" (6 quart pot)

~2.5 lbs beef roast, defatted as much as you can
~2 c frozen crinkle cut carrots
~1 large sweet potato, peeled and cubed
~1 c lentils
~1 T minced onions
~1 t garlic powder
~2 c water

Boil lentils for 20 minutes. Drain.
Add all ingredients to crock pot.
Cover and cook on low for 8 hours.
Stir and mash the meat with a serving spoon until it falls apart.

6 servings.

This was really, really good. Like amazingly good. AND that's after it's been reheated. I need to pat myself on the back or something. AND I need to make it again so I can see what it's like not reheated. Because it's that good. Yum.
