I'm pretty sure I don't have a drop of French blood in me, but I have actually BEEN to France. I don't remember what food I had during the trip other than having a croissant every morning for breakfast. This could be because I was too busy being a 16 year old taking advantage of the drinking age across the pond. Last night's dinner is probably something I'd ordered. It has "16 year old me" written all over it.
"Chicken Provençal"
~2 lbs skinless, boneless chicken thighs, cut into quarters
~2 red bell peppers, sliced
~1 yellow bell pepper, sliced
~1 (28 oz) can plum tomatoes, drained
~3 garlic cloves, minced
~1/ t salt
~1/4 t fennel seeds, crushed
~3 strips orange peel
~1/2 c chopped basil
Add all ingredients to crock pot.
Mix thoroughly.
Cover and cook on low for 9 hours.
6 servings.
This was really good. It has a nice combination of flavors. Biting into the cooked orange peel was a bit surprising for my taste buds (even though I knew it was it there), but they got over it super quickly. I'd definitely make this again.
