The Missing Ingredient.

Apologies for the sporadic posts these last 2 weeks. My little helper is teething and has become oh so clingy. Here's what I made yesterday...

Most cassoulet recipes call for sausage. I made one that didn't.

"Cassoulet" (6 quart pot)

~1 lb boneless skinless chicken thighs, cubed
~1 t salt
~1 t ground cumin
~1 t dried cilantro
~1 bay leaf
~1 onion, sliced (it was supposed to be diced, but I read it wrong)
~1 (15 oz) can navy beans, rinsed and drained
~1/2 (15 oz) can black beans, rinsed and drained (was supposed to be a full can, but my other half used some of the beans for dinner the day before)
~1 large tomato, crushed (because I had a large tomato. The recipe called for a can of crushed tomatoes)
~1 1/2 c chicken broth
~1/2 c orange juice

Combine all ingredients in crock pot.
Cover and cook on low for 8 hours.
Remove bay leaf before serving.

6 servings.


This was supposed to be called "Smoky Chipotle Cassoulet", but I couldn't find the smoky chipotle ingredient (1 chipotle pepper in adobo sauce, minced) at the store, so I left it out. It ended up tasting like homemade chicken soup with beans in it. It was good and I'd make it again, but only after I find the missing ingredient.
