Labor Day has come and gone. THAT means it's fall. Maybe not "officially" according to the calendar and whatnot, but who cares? Right? Right. It. is. fall. My favorite time of year. To celebrate, I'm crocking fall-ish food all week long.
"Harvest Time Turkey Loaf" (6 quart pot)
~2 lbs ground turkey
~2 eggs, beaten
~3/4 c bread crumbs
~1 apple, peeled, cored, and minced
~1/4 c apple juice
~1/4 c onion, minced
~1/2 c shredded cheddar
~1/4 c fresh parsley, minced
~1/4 c walnuts, chopped
~1/2 t ground allspice
~cranberry sauce
Mix all ingredients except cranberry sauce in a large bowl.
Form a loaf.
Place in crock pot.
Cover and cook on low for 6 hours.
Serve with cranberry sauce.
8 servings.
This was very good. I'd never used allspice before, which caught my tastebuds a little off guard, but it was yummy. NOT as yummy as THE BEST MEATLOAF EVER, but I'd make it again.
