Leftovers.

This week is "Leftover Week". I'll be crocking things that were SUPPOSED to be made during other themed weeks, but didn't get to happen for one reason or another.

I started off with "Easy Swiss Steak" that was leftover from "Easy Week".

"Easy Swiss Steak and Mashed Potatoes" (6 quart pot)

~1.5 lbs round steak, cut into bite-sized pieces
~1 lb baby carrots
~1 envelope dry onion soup mix
~1 (8 oz) can tomato sauce
~1/2 c water
~4 baking potatoes
~salt
~pepper
~1/4 c milk
~1 t garlic powder
~chives


Place carrots in crock pot.
Top with steak.
Combine soup mix, tomato sauce, and water in a small bowl.
Pour mixture over steak.
Place potatoes on top.
Cover and cook on low for 9 hours.
Remove potatoes and mash in a large bowl.
Mix in remaining ingredients.
Ladle crock pot mixture over potatoes.

I should note:

The original recipe suggested serving the beef over mashed potatoes. I decided to shove the potatoes into the crock pot and make them myself because I'm cool like that.

4 servings.


This was really good. AND, as the name suggests, really easy to make. (Even with the addition of the mashed potatoes.)
