Vegetarian leftovers.

This was leftover from the vegetarian weeks.

"Stuffed Tomatoes" (6 quart pot)

~5 large tomatoes, cored using the sharpest knife you own (I froze the innards because I KNOW I'll have a recipe for crushed tomatoes someday)
~5 oz goat cheese
~1 garlic clove, chopped
~2 T fresh basil, chopped
~1/4 c water

Add water to crock pot.
Mix cheese, garlic, and basil in small bowl.
Spoon into cored tomatoes.
Cover and cook on low for 2 hours.

5 servings.


The only issue was trying not to eat all of them in one sitting. So good. I forsee other versions of this crocking in the future. Yum.
