What the? leftovers.

This didn't make it into "What The? Week".

"Country Captain" (6 quart pot)

~1 3/4 pounds boneless, skinless chicken thighs
~2 Granny Smith apples, peeled and diced (the original recipe said to peel them. I didn't because the skins have gone unnoticeable in every single apple dish I've crocked so far.)
~1 onion, diced
~1 green bell pepper, seeded and diced
~3 garlic cloves, minced
~1 tablespoon curry powder
~1 teaspoon ground ginger
~1/2 teaspoon sea salt
~1/4 teaspoon cayenne pepper
~1/4 cup raisins
~1 (14.5 ounce) can diced tomatoes
~1/2 c water (the original recipe called for chicken broth. We're out and I didn't know it)
1 cup uncooked long grain rice

Add all ingredients except rice to crock pot.
Mix well.
Cover and cook on low for 6 hours.
Add rice and mix.
Cover and cook on low for 30 minutes.

6 servings.


You know that meal you were planning on crocking soon? Don't make it. Make this instead. I could eat this every day and be happy. Luckily, it made a boatload of leftovers. Win!
