"Spanish Paella with Chicken and Sausage" (6 quart pot)
~1 T olive oil
~4 chicken thighs (I used bone-in this time because Lauers was out of boneless. Imagine that.)
~1 onion, chopped
~1 clove garlic, minced
~1 lb spicy Italian sausage, quartered (It was supposed to be hot smoked sausage sliced into rounds, but I didn't know what that was when I went shopping, so I bought the same sausage I used last Friday and improvised.)
~1 (14 1/2 oz) can stewed tomatoes, undrained
~4 c chicken broth
~1 c arborio rice, uncooked
~1/2 c frozen peas, thawed*
Heat oil in large skillet over medium-high heat.
Add chicken and brown on all sides.
Transfer chicken to crock pot.
Add onion to same skillet and cook until translucent.
Stir in garlic, sausage, tomatoes, and chicken broth.
Stir in rice.
Pour mixture over chicken.
Cover and cook on low for 8 hours.
Add peas and stir just before serving.*
4 servings.
*I totally forgot to add the peas.
The chicken and sausage were delicious. My other half ended up coming home from work later than I'd planned, so I had this sitting on warm for a few hours. I'm PRETTY sure that was the demise of the rice. The flavor was amazing, but it ended up like mush. Still, he says I should add this to the Make More Often list. I'll count that as a win.
