"Mushroom Soup" (6 quart pot)
~2 T olive oil
~2 Vidalia onions, coarsely chopped
~1 pkg (8 oz) baby bella mushrooms
~1 pkg (8oz) white mushrooms
~salt
~pepper
~2 T butter
~6 garlic cloves, peeled and coarsely chopped
~2 T cooking sherry
~4 c beef broth
Heat olive oil in large skillet over medium-high heat.
Add onions and mushrooms.
Season with salt and pepper.
Cook until onions and mushrooms are cooked down and fragrant. (About 10 minutes)
Add butter and garlic.
Cook 2 minutes.
Add sherry to skillet and deglaze.
Dump mixture into crock pot.
Add beef stock.
Cover and cook on low for 6 hours.
4 servings.
I'm not a HUGE fan of mushrooms, but this is one delicious soup.
