Gobble, gobble!

One my life goals is to crock a Thanksgiving dinner, but Thanksgiving 2011 was not the time to do it. My pots stayed here in Maryland with sad faces while we went to Pennsylvania and had someone else do the cooking.

Just before we got in the car to come home on Sunday, I asked for a number. Jung picked 37. (Thanks, Jung!) I laughed when I saw that it's turkey based. 37 was...

"Rich and Hearty Drumstick Soup" (6 quart pot)

~1 turkey drumstick (mine was 1.25 lbs)
~10 baby carrots, cut into thirds
~3 celery stalks, thinly sliced
~1 onion, chopped
~2 garlic cloves, minced
~1 t poultry seasoning
~32 oz chicken broth
~3 c water
~8 oz uncooked egg noodles
~1/3 c fresh parsley, chopped
~salt and pepper

Spray crock pot with PAM.
Add turkey, carrots, celery, onion, garlic, poultry seasoning, broth, and water to crock pot.
Cover and cook on HIGH for 5 hours.
Remove turkey and set aside.
Add noodles, cover, and cook for 30 additional minutes.
Meanwhile, remove and discard turkey skin and bones and shred the meat.
Return turkey to crock pot.
Stir in parsley.
Add salt and pepper to taste.

8 servings.


This soup tasted like the soup my mom makes with Thanksgiving turkey leftovers. It could be the exact recipe, ingredient-wise (she does hers on the stovetop). I have no idea. So, if you have an extra turkey leg or two lying around not being used, you could make this soup. In fact, you should make this soup because it's super yummy and is the kind of soup you crave when you want your mommy to make you feel better and her soup is the ONLY way.
