Breaking good.

I finally got the replacement stoneware insert for my favorite/preferred pot from my friend. As we thought, it was an exact fit. Woot! (Thanks, Karina!) I used it for the first time yesterday.

"Blue Cheese Potatoes" (6 quart pot)

~2 pounds red potatoes, cut into 1/2-inch pieces (The recipe said to peel them. I didn't feel like following directions)
~1 1/4 chopped green onions, divided
~2 T olive oil, divided
~1 t basil
~1/2 t salt
~1/4 t black pepper
~2 oz blue cheese

Layer potatoes, 1 cup green onions, 1 T oil, basil, salt, and pepper in crock pot.
Cover and cook on low for 7 hours.
Turn crock pot to high.
Stir in cheese and remaining oil.
Crock for 5 additional minutes to allow flavors to blend.
Top with remaining green onions and serve.

5 servings.


Oh. Man. All of you blue cheese lovers out there should make this. It's awesome.
