Hot stew burn baby.

Frank picked number 3.67. (Thanks, Frank!) I rounded up. Number 4 in the pile was...

"New Mexican Green Chile Pork Stew" (6 quart pot)

~1 1/2 lbs pork tenderloin, cut into 1-inch cubes
~3 red potatoes, cut into chunks
~1 c chopped onion
~1 (40z) diced green chiles
~1 c frozen corn
~2 t sugar
~2 t cumin
~1 t dried oregano
~1 (16 OZ) green salsa

Place pork, potatoes, onion, chiles, and corn into crock pot.
Stir sugar, cumin, and oregano into salsa.
Pour salsa mixture over pork and veggies.
Stir gently to mix.
Cover and cook on low for 7 hours.

6 servings.


I crocked this for a playgroup we went to on Wednesday night. It was a HUGE hit. It was spicier than I thought it would be and honestly, I'm not entirely sure why that is considering I knew all of the ingredients that were in it. My other half puts this in his favorites pile. I'll definitely be making this again. (Maybe next time I'll take a better picture of it. I was running late and snapped a quickie before shoving the hot pot in the backseat of my car.)
