"Roast Pork Soup with Hokkien Noodles" (6 quart pot)
~2 T hoisin sauce
~1 T sugar
~2 t Chinese five-spice powder
~2 lbs pork loin
~6 c chicken broth
~1 1/2 t fresh ginger, peeled and cut into thin slices
~3 garlic cloves, thinly sliced
~2 T soy sauce
~1 head bok choy, sliced
~7 oz hokkien noodles (the recipe called for soba noodles. I couldn't find them ANYwhere, so I bought noodles that looked kinda like the picture on the card.)
Preheat oven to 350ยบ.
In a small bowl, combine hoisin sauce, sugar, and five-spice powder.
Baste pork with sauce and roast for 45 minutes.
Let meat rest 15 minutes and slice into thin matchstick pieces.
Place pork in crock pot.
Add broth, ginger, garlic, soy sauce, and bok choy.
Cover and cook on low for 7 hours.
Stir in noodles and cook until heated through.
6 servings.
I used my OVEN! It's a Christmas miracle! This soup is amazing. It's super flavorful and it got me to eat a vegetable I'd never had before...and I liked it. Delicious.
