"Classic Chili" (6 quart pot)
~1 1/2 lbs ground beef
~1 onion, chopped
~1 green pepper, chopped
~2 garlic cloves, minced
~3 (15 oz) cans dark red kidney beans, rinsed and drained
~2 (15 oz) cans tomato sauce
~1 (14 1/2 oz) can diced tomatoes, undrained
~3 t chili powder
~2 t dry mustard
~3/4 t dried basil
~1/2 t pepper
~1 dried chili pepper
Cook and stir beef, onion, bell pepper, and garlic in large skillet until meat is browned and onion is tender.
Drain fat and discard.
Transfer mixture to crock pot.
Add beans, tomato sauce, tomatoes with juice, chili powder, mustard, basil, pepper, and chili powder.
Mix well.
Cover and cook on low for 8 hours.
Remove chili pepper before serving.
6 servings.
This might've been a heavier chili can-wise than the one I crocked on Wednesday. I'm not used to having such a full pantry! (Even if it was only for a few days.) Man, this stack of cards has A LOT of chili recipes in it. This particular one lives up to its name, I think. It's what you'd expect from a recipe called "classic chili". It's not particularly spicy and it has beef and beans in it. I'm super glad that one of my little helper's favorite foods at the moment is kidney beans because without him helping us eat all of these chilies, I might have become chilied out a dozen or so chili recipes ago.
